Attempting to be Vegan in South Carolina

Going to a concert in Fairfax, Virginia sparked an amazing road trip. As it snowed the day after the concert, and the cherry blossoms had not yet bloomed, we drove south towards warmer weather. The first good meal in South Carolina was at Mellow Mushroom. They offered many vegetarian and vegan options including Daiya Cheese, tofu, and tempeh. After a hearty meal we headed to Congaree National Park. This was a wonderful place to experience my first National Park as it was a unique swap area that had a boardwalk trail. Due to the time of year we missed the crowds and mosquitoes. Before leaving South Carolina we checked out the Capitol and ate dinner at The Good Life CafĂ© which was my favorite meal of the trip. I loved that I could get kale and fruit as my two sides and the raw tacos with cashew cream were delicious.
