My trip began in Las Vegas where I went to Go Raw Café (www.gorawcafe.com) located at 2381 East Windmill Lane, Las Vegas, Nevada 89123. I ordered Neat Loaf & Fries which according to their menu is a rich savory mushroom, herb, and nut loaf served with house "fries" (avocado), veggies, and sprouted bread. I loved this meal. I would be a raw vegan if I could eat like this everyday but sadly I was unable to bring the cook home with me.
Following my delicious and healthy meal I drove to Springdale, Utah where I stayed at Zion Lodge. I woke up bright and early to have breakfast from Café Soleil (www.cafesoleilzionpark.com) located at 205 Zion Park Boulevard, Springdale, UT 84767. The vegan items were clearly marked. I ordered Steel-cut oats topped with seasonal fresh and dried fruit and nuts, cinnamon, brown sugar, and almond milk. They make sandwiches to take hiking so I ordered the superfood veggie wrap which comes with spring mix lettuce, kale, cabbage, carrots, fresh berries, nuts, pumpkin and sunflower seeds, dried cranberries and cherries, flax and chia seeds, ginger citrus dressing in a whole grain tortilla. That wonderful combination of ingredients gave me the energy I needed to keep going after hiking the narrows to hike the emerald pool trail.
