Attempting to be Vegan in a Winter Wonderland

I've never been a fan of Pennsylvania winters. Instead of negatively viewing the weather as something that is confining me indoors, I should see this as an opportunity to catch up on reading all of the books that remain untouched in my apartment, watching all of the movies I want on Netflix, and exploring and sharing new vegan recipes. In the most recent novel I've read, The Fault in Our Stars, the main character is a vegetarian. I spent six straight hours on my couch reading about sixteen year old Hazel Grace Lancaster's life while I laughed, cried, and ate snicker doodle cookies from Trader Joes.


Here is the recipe for the delicious pancakes pictured above:
Mix 1 1/4 Cups All Purpose Flour with 2 teaspoons Baking Powder in one bowl. In another bowl mix 2 Tablespoons Canola Oil, 1/3 Cup Water, 1 Cup Almond Milk, 1 teaspoon Vanilla, and 2 Tablespoons Maple Syrup. Mix wet ingredients into dry. Add 1 Cup of Blueberries. Pour the batter in a preheated nonstick pan. They are ready to be flipped once bubbles appear. Enjoy with maple syrup.
